Getting Kids to Eat Their Veggies

Posted by: Heidi - April 19, 2012. Fun Snack Ideas

I loved vegetables as a kid.  My mom tells me that as a kid I used to reach out and snatch florets of broccoli as we were grocery shopping.  Unfortunately, not all kids share my love of fresh produce.  According to the US Department of Health, children should be having 3-4 servings (cups) of vegetables every day.  You may find that it’s difficult to get your children, especially younger ones, to eat just one serving!

Comfort Food Reinvented

Posted by: Heidi - April 5, 2012. Recipes

On a cold day there’s seriously nothing I love better than a plate full of mac-and-cheese.  The more cheese the better.  We all have our “comfort food,” that dish we know isn’t great for us but you just can’t help ourselves.  So how can we make these guilty pleasures a little less guilty?  Let’s re-think a few favorite comfort foods.

Mac and Cheese

I have a folder of mac-and-cheese recipes on my computer.  That’s how much I love it.  Most of them use less cheese and add more goodies to bring…

Gingerbread: It’s Not Just for Houses Anymore

Posted by: Heidi - December 16, 2010. Holidays

The gingerbread house is an iconic Christmas tradition, and every kid has probably made at least one.  But, gingerbread can do so much more than houses!  If you’re willing to get a little creative, there are lots of fun things you can make with this versatile cookie.

Or, you could switch up the recipe you’re using.  Obviously, you need a sturdy cookie that will hold it’s shape well.  Lebkuchen (lep-kue-gen), a German cookie made with molasses, is a great choice for making houses since it holds it’s shape so well.  This is a great recipe, though you…

‘Tis the Season for Cookies

Posted by: Heidi - December 6, 2010. Holidays

Decorating Christmas cookies can be as simple as dipping sugar cookies in melted chocolate, or as involved as piping on complex shapes and patterns in multiple colors.  Regardless of your skill level with a bag of royal icing, give it a try and I promise you’ll be making beautifully decorated cookies in no time.  They make great gifts; just get some pretty ribbon and some clear baggies, and you’ve covered gifts for your kids’ teachers, your yoga instructor, and any unexpected gift-givers that might come knocking at your door.

Posted by: Heidi - December 6, 2010. Recipes

Today I tried a brand new recipe given by a friend and it was absolutely delicious!! Any easy!!  It only took me no more then 15 minutes to put it all together from start to finish and then I just popped it in the oven.  So here it goes:

4 Sweet Potatoes

3 Apples

1/2 cup melted butter or coconut oil

2 tsp cinnamon

1/2 tsp nutmeg

Chopped pecans ( optional )

Peel and cut sweet potates into small cubes.  Do the same with the apples.  Spread both in a 9×13 inch baking dish.  Melt butter in a pan.  Add…

Thanksgiving: Messy, Memorable, and Delicious

Posted by: Heidi - November 12, 2010. Holidays

Imagine yourself (with beautifully coiffed hair) and your perfect children cooking happily together in your spotless kitchen; everyone is smiling and the kids aren’t arguing at all.  Alright, now snap out of it!

It might not look exactly like that, but I’m a big advocate of cooking with your kids.  It’s a great way to teach the basics of math and science, and it’s fun to spend time getting your hands dirty together.  Plus, if your kids are picky eaters they’re more likely to eat something that they helped make.

Our friends in the US will be celebrated Thanksgiving in…
